| “Archery Summit makes some of the most exciting Pinot Noir in North America (and therefore the world.)” - Food Arts With its Mediterranean exterior and subterranean caves, the Archery Summit winery, like our wine, is an original expression of old-world aesthetics and new-world savvy. Built into the hillside of our estate vineyard, the winery has five floors - two above ground and three below. Only gravity moves the wines from blending to bottling; we never use pumps, so the individual character of each estate’s wine is never diminished. Just hours after our grape clusters reaches optimal ripeness, we hand harvest and deliver them to our 100 percent gravity-flow winery. Grapes are hand-sorted and de-stemmed on the top floor and travel downward one floor at a time to our fermentation hall, aging caves, and bottling area, all without character-damaging pumps. Carved out of the hillside beneath the winery, our ageing caves are modeled on the subterranean cellars of the Côte d’Or. Naturally insulated with volcanic rock, the temperature in the caves remains between 55-59 degrees throughout the year, with humidity below 75 percent. Following fermentation, the wines flow from the tank to the caves where they age for as long as 18 months. We use only French oak barrels, often experimenting with small batches to find the optimal toast or barrel style for a particular estate wine In the caves, as in the vineyard, our approach is hands-on, and just as we harvest our grapes only when they reach optimum ripeness, we move our wines from barrel to bottle only when they are absolutely ready. An innovative part of our 100 percent gravity-flow process is an elevator system on the lowest floor, 60 feet below the vineyard, which lifts the tanks of blended wine to barrel or bottling level. The outstanding Pinot Noir that begins in the vineyard fulfills its destiny in the bottle. |
